The contents of this green-lipped mussel shell were enjoyed at a recent excursion to a nearby seafood restaurant/raw bar.  Also known as the greenshell mussel, it is from New Zealand.  I must say that, despite its long journey to Texas, it was incredibly meaty and juicy.  Flavored with a little bit of garlic butter, I was in heaven.  Of course, upon seeing both the inside and outside of the shells, I had to abscond with a few (wrapped in a napkin) in my purse to to immortalize later as paintings.  Here is my first attempt.

Upscale upermarket sushi has more variety in the nigiri section than most chain grocery stores':  imitation crab and surf clam (both belted with a ribbon of nori), bluefin tuna, salmon, yellowtail tuna, shrimp, bonito, and mackerel are the freshly caught and sliced offerings.  Instead of the typical maki (rice surrounding a filling and encased with nori), uramaki  is offered in which rice is the outer layer surrounding the filling and nori.  As to be expected, the price is noticeably higher as well.  Set against a black background, this sushi looks stunningly gem-like which befits these treasures from the sea.

Every now and then, the sushi case at my local supermarket calls my name. Glistening little delicacies of hand cut and formed fish and rice maki, nigiri, and rolls beckon to be taken home, kissed with soy sauce and a dab of wasabi, and eaten with delight.  (Washing it down with a Kirin Ichiban or Sapporo doesn't hurt either.) Yes, supermarket sushi is not upscale, nor is it meant to be.  The green plastic grass like garnish and a foil package of soy sauce make that obvious.  Yet, it can "hit the spot" when a burger and fries just won't do.

It's the weekend--time ease into the day with the sights, sounds, and aroma of bacon sizzling in the black cast iron skillet, eggs gently frying in a melted dollop of butter on the next burner, and bread in the toaster turning a golden brown.  Just add orange juice (sorry, I still don't like coffee), a newspaper, and fluffy slippers--the perfect start to the day!

Cracked Egg

What did you have for breakfast this morning?  Hopefully, it was something delectable and nutritious like an egg.  Did you know that the vitamins, minerals, protein, and antioxidants from an egg aid in brain function, muscle strength, weight management, and sustained energy?  I never truly thought about it.  Sounds like a "no-brainer" to me.  Guess what I am having for breakfast tomorrow?

Castilian Garlic Soup Recipe (by special request)

Castilian-Style Garlic Soup
Note:  This recipe is in the book, Delicioso, by Penelope Casas.  I’ve adjusted it somewhat (more garlic, no diced ham) to reflect my memory of a similar soup I had in San Diego 16 years ago.
For the croutons:

5 T olive oil
4 garlic cloves, peeled and minced
4 ½ c day-old country bread, cut in ½-inch slices
1 t sweet paprika

For the soup:

1 head garlic, peeled and crushed (Yes, all the cloves)
4 ½ c water
1 t sweet paprika
Salt, to taste
Pepper, freshly ground
4 c beef broth or consommé
6 eggs

Place 5 T olive oil and the minced garlic in a skillet and slowly heat until the garlic begins to color.  Add the bread pieces and sauté slowly until they are crisp and golden (about 15 minutes).  Sprinkle in 1 t. paprika and stir to coat the bread.  Reserve.

For the garlic broth, in a soup pot heat the remaining T of oil and lightly sauté the crushed garlic cloves.  Stir in the remaining t. of paprika, the water, salt, and pepper.  Bring to a boil, cover, and simmer 45 minutes.

Bring the beef broth to a boil.  Arrange 6 ovenproof soup bowls on a baking tray and add 1 T beef broth to each.  Carefully slip an egg into each soup bowl and pour in more beef broth until each bowl is half full.  Place the tray with the bowls in a 450 degree oven until the eggs are set (about 4 minutes).  Fill the bowls with the reserved garlic broth, simmering, and scatter the croutons on top.  Serve immediately.
